BISON

Our bison are fully graded through a government controlled system and the meat cut to rigid specifications.

ELK

Amongst hunters, Elk is considered to be the best heirloom meat. This is a very lean bright red meat and is prepared similarly to beef, but has distinctive enough flavour from beef that you know you are eating something special. It also contains more iron and protein than any other meat. Our Elk is raised on farmers so they don’t feed on conifers as in nature, one of the reasons we can reduce that gamey flavour.

VENISON

Venison is often misrepresented as Elk, but it is in fact Deer, and is rare to find for culinary menus for the most part. It often has slightly more gamey flavour to Elk and has a little more fat. Venison has 50% less fat than beef while having a finer texture. Like many heirloom meats, good butchery is essential to flavours in the finished meal. Cooking process is important in getting a perfect final result.

DUCK

Chef’s love duck on the menu because it is the perfect balance between lean, nutritious meat without sacrificing rich flavour. Duck gets a bad rap for being fatty. Most of the fat is in the duck’s skin, but if you don’t serve the skin, the nutrient content is similar to chicken. Duck is a dark meat bird throughout, so if you like the taste and texture of the dark meat of chicken thighs, you will love our duck!

PHEASANT

Pheasants are seasonal breeders, so often difficult to get – a clear benefit when purchasing through Pre Pak is their availability all year round. These are the oldest game bird variety in recorded history. A lean bird with white and dark meat like chicken, but has a much richer flavour. When it comes to Pheasant, farm raised birds have better amino acid profiles, for increased health benefits, with a less gamey flavour.

QUAIL

Quail is breed continuously so they are a popular menu choice the world over. They are small birds, usually about 4oz. each. This tiny size makes them quick and easy to cook by either roasting, frying, braising, broiling, grilling or saute. They must be cooked quickly to keep from drying out. Like chicken they have dark and while meat, but with a slightly more intense, mild gamey flavour.
